Born and raised in St Georges, Grenada, Chef Al has earned quite the reputation for his innovative style and unparalleled Caribbean cooking and pastry making.

Before Al could even reach the stove he shared his dream of becoming a chef with his grandfather.  Under his guiding hand by the ripe age of ten, Al was cooking the family dinner.  He developed his natural ability by enthusiastically experimenting with different family recipes that were passed down with each generation.

By age 13 he moved to Montreal, Canada with his mother.  There were no culinary options in high school, so all that was learnt about cooking was either from television, books and his number one reference, his mother.

He undertook formal culinary training at Formation Professionnelle en Art Cuilinaire de Patricia Lelim.  There he successfully completed diplomas in French pastry, cake making, and cake design.

Throughout his career growth, his passion for food, quality, people and Grenada is always evident so much so that he gets calls and emails from family, friends and even old employees asking for recipes or simply to just check in.

Al makes cooking uncomplicated and simply communicates what needs to be done to make cooking enjoyable, tasteful and appealing.  His strengths, special skills & passion along with years of experience enable his excellent leadership style to complement the vision shared by many.
